I know that pull-ups increase grip strength, but does someone who is 200 pounds doing 1 pull-up have the ability to apply 200 pounds of grip strength?

Of course not
Do you mean horsepower?
Think about it logically -
Gebrselassie is 5'5 119 lbs.
Jager is 6'2 145 lbs.
Even if it was somehow related to exact individual body weight, do you really think a pull-up is the same for Geb and Jager?
Jager (or other tall guys) have to go through WAY more range of motion, so the exercise is a lot more difficult for them.
Look at Cross-Fit championship or Olympic lifting - these guys are almost all between 5'7" and 5'10", there are barely any 6'+ guys performing well in the competitions and lifts because they are a lot harder for them due to longer limbs, levers and range of motion. Male gymnasts are even smaller.
