How does the Brooks Hyperion Tempo feel underfoot when running? Is there any sink in? Or is it very firm and fast? Is it at all like the Asics GT 2000 ?

Not like the GT2000. Tiny bit of sink in, little bit of pop. Very light shoe overall.
"Not like the GT2000."
How is it different? Is less stable?
Yes it is less stable the GT2000 is a STABILITY shoe while the Hyperion Tempo is a NEUTRAL shoe. However, for a lightweight neutral trainer it is very stable.
if you have to ask how these two shoes are alike...you're asking the wrong questions.
these are two very different shoes. if you even need to ask this question, then I'd bet that you don't really have a need for a shoe like the Hyperion Tempo.

Agreed not in the same category whatsoever

I run for 6 miles at about 8-9 minutes per mile. I do that at least every other day. I want a shoe that will not slow me down (like some of the new midsole shoes do) and will be stable. Stable meaning that the shoe is solid, stays in place on the foot, particularly around turns and I feel in perfect control.
The 2000 7 works great for me but I'm looking for something that could even be better. The Hyperion certainly sounds interesting.
No shoe will slow you down in that category for those runs

That's not true at all. I've tried a number of shoes with the new foams and these shoes slow me down. It's like running in sand.

according to studies of the original 4%, nobody had a negative impact by wearing the shoes. they help everybody, though some more than others.
you may not like the feeling, but they do make you faster.
seems like you have hundreds of options though given your parameters. no need to spend $150 either on any superfoam.
go on runningwarehouse, search for neutral shoes in your size, on clearance, that weigh under 10oz but more than 7oz. list the options here, and we will tell you what to get. or just tell us your size.
