Male--Peter O'Toole in Lawrence of Arabia
Female--Francis McDormand in Fargo (although I would also have no problem with Meryl Streep in Sophie's Choice as others have stated).
While not the best acting, Rocky and Terminator were iconic.

Great call. I think Bogey gets a nod for the same film. Two of the most memorable performance of all time in one of the most memorable films in Hollywood history.
