Yes, private institutions can have vaccine mandates. That is fundamental libertarianism. The government can't force the hospital to admit people the hospital believes are dangerous. Do you not get the public/private distinction?
Unvaccinated people demonstrate awful decision making about their health and the health of their neighbors. That's reason enough to ban them, who knows what else they do that' dangerous.

As 2600 bro said, hospitals have had vaccine mandates for workers for a long time. You did not have an issue with those before, even though many of those vaccines (the flu shot, for instance) do not confer outstanding sterilizing immunity.
The non-aggression principle would suggest that hospital patients have a right to staff members who are less likely to carry harmful diseases, as well as those who are competent at risk evaluation.

Wow, I leave for a week, and y’all are still going at it. Well, golly, my daughter’s entire friend group at university got Covid a few weeks ago, except for her and one other person. The two who didn’t get it? Yep, unvaccinated.
Here’s how ridiculous the entire thing is. She’s pre-med, along with her friend. Currently shadowing but they are not allowed to shadow ER because of their vax status. The ER is not testing for Covid. So, you can bring Covid, unwittingly, into the ER, but as long as you are vaccinated, you’re good. Brilliant, mate!
Vax status shouldn’t matter, but they should absolutely be testing if they are really concerned about it. Nope. The autocratic, tyrannical medical monopoly simply wants you to bow down and kiss the ring.
I suspect your daughter had plenty of immunity from, um, extra curricular activities.
