I'm not close enough to GMs to know if they all have nearly perfect recall of all tournament games for long periods of time. I would guess it's not as widespread as you state, but that they'd remember the opening and main ideas of every game, if not the precise move order of all games.
One best remembers the important things, but there's no reason at all to remember insignificant happenings. Capablanca from an early age purposely did not remember things that weren't important, because he didn't want them to take space in his memory.
Personally I played many games a day with Fischer numerous times, made no effort to remember insignificant details of those games and doubt that he did either, but we knew and remembered the lines, the improvements and the important parts of them.
Besides that, there's a video of Hans Niemann 3 years ago at the age of 16 reciting every move from a couple of games he'd recently played, including his thinking and strategies, so he could certainly do it now even better. However, perhaps he doesn't care to do so.
Good for him.
