Her husband was the head coach at Spalding...
Anyone have any ideas on assistant coaching/GA roles, preferably in Arizona?
Any thoughts on this opening? Where did the previous coach gallop off to?

Last coach was entering his 5th season with them, per their athletic website (6th overall with each program).
A lot of coaches getting hired that have coached at a lot of different schools for 1-3 years. Experience is great, but if your candidate bounces around constantly and is short term everywhere, that seems like it should be a red flag. Even a very talented coach isn't of much value if they are only with the program for 1-3 years.

GA jobs get posted on here as well as NCAA Job Market and USTFCCCA.
Since it sounds like you are entry level your best bet is to be a volunteer at one of the Arizona DIs. You could possibly look and see if any, of the many, Arizona JuCos have a part time position.

When in doubt, email the coach where you'd like to attend. They may not have a team grad assistant, but there are typically general athletic department grad assistantships. One of our coaches is a grad assistant for the athletic department, but also "volunteers" as a distance coach. The school works with their schedule and her classes are flexible.
