This analogy is utter garbage because their is no motion control / second property in what the video demonstrates.
There is ONLY the elastic potential of the shoe being discussed, NO second property. The extreme bending / forced coiling of the shoe is showing, in an exaggerated form, that the carbon plate specifically is capable of producing a more advanced energy return than foam alone.
Why can we safely say this? Because we know that the plate is the only foreign object in the shoe. There's no "magic" at play here, it's really a rather simple observation which I am sorry you apparently fail to understand.
