So how could a lawsuit filed in Arizona get kicked towards a Canadian company operating in Canada?
I have no idea how that would work and I would like to get an explanation from somebody who knows that kind of cross country law stuff.

Because it sets up that 'Camille reached a state of “Autistic burnout”' leading to her missing training, missing competing, and missing income.
That is actually a quote from her complaint as to one of the way she has been damaged; along with her Lululemon contract being terminated, husband now having to coach again out of state (due to her income being lowered), etc.
Her blog post has to be voiced consistent with the complaint if she wants to keep up that it's a part of her person that is material and relevant to her suit and alleged damages.

Interesting thing about Barrett is that he made a Youtube video where addressed Camille and was critical of her claiming autism. He's belief was that autism is something you get diagnosed with as a child, not as an adult and she was using it as a cop-out.
Then somehow a switch was flipped and he turned into an advocate for Camille. Odd behavior, but par for the course.
