I mentioned this in another thread: maybe when Houlihan's team said that the food truck served "pork offal", they might have just meant good old chorizo. Chorizo is a very common offering, at least in Portland-area Mexican food places.

So my hypothesis is that the best her team could come up with was, well, maybe she ate a chorizo burrito thinking it was asada. Chorizo could sorta be described as containing "pig offal", or "pig organs such as the heart, kidneys, and lungs", but really only in the same way that you might say a fast-food sausage biscuit was a biscuit served with pig organs.
I don't think this is the place she got her burrito, but just a regular old Beaverton-area Mexican restaurant with Chorizo as a choice:

You guys are missing the point. You are trying to be rational about this.
Houlihan feels hurt here. She just said the first thing that came to her mind (the burrito). Of course it makes no sense, but that’s not the point. She feels very sad about testing positive and the consequences. She does not want that.
Can we simply talk about how she feels and stop focusing on her explanation? WE ALL KNOW IT MAKES NO SENSE. Even the governing body knows it makes no sense.
We also know there is 0% chance that Jerry has never heard of Nandrolone.
If she is allowed to compete at the trials, she would feel much better.

You obviously have no idea how lard is rendered from a whole pig. You are talking about Leaf Fat which does accrue around the kidneys, it would not have any of the contaminants that the kidneys take on. The vast majority of the fat going to lard production would be from the cap.

This menu lists Asada as the first meat choice, along with two other menu items that could be described as containing pig offal - Buche (pork stomach) and Chorizo.

This. The fact that Houlihan's lawyers couldn't provide any of the above in her defense makes her story look 100% false. I can only imagine the contortions her legal team went through in her defense. 1) The food truck in question had wild boar meat -- an expensive gourmet meat -- on the menu the day Houlihan purportedly bought and consumed the item. 2) Food truck's meat supplier never again had wild boar meat available so none was available to test. 3) Food truck changed meat supplier or meat supplier went out of business so again no samples available for testing. 4) Food truck itself went out of business so again no way to find/test samples.
