I mentioned this in another thread: maybe when Houlihan's team said that the food truck served "pork offal", they might have just meant good old chorizo. Chorizo is a very common offering, at least in Portland-area Mexican food places.

So my hypothesis is that the best her team could come up with was, well, maybe she ate a chorizo burrito thinking it was asada. Chorizo could sorta be described as containing "pig offal", or "pig organs such as the heart, kidneys, and lungs", but really only in the same way that you might say a fast-food sausage biscuit was a biscuit served with pig organs.
I don't think this is the place she got her burrito, but just a regular old Beaverton-area Mexican restaurant with Chorizo as a choice:
