Harry Styles ran a 3:24 in London this year and then did a 2:59 today. How? You could argue that he was close to 3 hour shape in London but ran slower because of the heat… but today was much hotter and he runs 25 minutes faster with even splits

I wouldn't say 100 mile weeks is overkill for a sub 2:30 attempt. I and others have done that sort of mileage when going for sub 2:30. More mileage helps, especially for those of us with some, but no exceptional talent. It is not a requirement but if you have the time, and he clearly does, then why wouldn't you? It really isn't that different to what Ran to Japan is doing. His training volume is insane, but as he says, he is trying to run a time that is usually run by far more talented runners.
On the nutrition front - yeah, Floberg is an idiot. No disagreement from me there.

- I have to assume their sports science degrees are real, since both of them ended up qualified and employed in PE-adjacent school subjects, up to and including Head of Sports and Head of PE, which is wild considering the wacky things they say in their videos -
but Mr Messy Happy sells himself with a FA Rank 3/UEFA B certificate and a British Triathlon Level 3 coach, and he appears in neither coach directory (admittedly because the FA coach directory doesn't exist anymore, but British Triathlon is still out there) - which might very well be that he let them lapse when he moved abroad, but why sell yourself with them then? And why not become accredited with an organisation in the country you live? And Mrs Messy Happy claims a UESCA running coach qualification, a US based certification, wild choice for people based in Thailand, but she doesn't show up in their coach directory.
That is three claimed certifications, NONE of which lists the Bridges as certified coaches.
I gotta say I feel he's really screwed for Chicago. He has run so little quality in this block I feel like there's no way he's actually following his coach's training. In the past two weeks his only workouts have been 400m reps two weeks ago and 1.5 mile reps this week.

Oh for sure. I don't quite get it. It's peak time before the race and yeah he hasn't done many quality workouts. He did a 5,4,3,2,1 workout with his buddy but that definitely was not in his coaches plan. 400m repeats 5 weeks out from the marathon? Don't get that either. Okay yeah he had his HM a few weeks ago but excluding that I'm confused at his coaches plan. High mileage but lacking in quality workouts. Who knows I could be wrong.
