Any mention of Jesus in Josephus is later scribal interpolation. If you care to bother understanding why, the explanation is easily googled and understood.
And Tacitus says "followers of Chrestus" which people have taken to mean Christians. But the existence of Christians in no way argues for a historical Jesus anymore than the existence of Mithraists argues for a historical Mithras.
Also, the dating of the Gospels isn't so clear. The evidence for their dates isn't that compelling.
"It's almost impressive that there is such a diverse group of secular historians, religious historians, and contemporary in-house stories (Gospels, Pauline Epistles) that all point to one man as the instigator of so much."
The Pauline epistles hardly seem to be talking about the figure from the gospels. You read them with the Gospels in mind and make the necessary harmonizations based on pre-existing theology. If you only had Paul, you wouldn't have much sense of a historical Jesus, especially considering the way things are translated were done so with harmonization in mind.
