What should I expect for this hearing? I have a clean record in my college. I'm just not sure if I should be coming with anything such as a letter of apology to show I regret what I've done. (Which I do, and it's not just because I got caught.)

Obviously, you're not a teacher. Students who get caught plagiarizing almost always do it again in the same class, if there are any assignments left. Call it the Marion Jones or Ben Johnson phenomenon.

If you were accused of plagiarism, well, then you'll be more careful next time. It will be a lesson for you that if you're using somebody else's material in your own research, you should always rewrite it in your own words. However, if you don't know how to do it, better find a good paraphrasing example to help yourself understand how to rephrase the necessary piece of information in such a way as to avoid plagiarism and present another author's ideas in a new way. Otherwise, if you simply steal someone's text, your work may be rejected or even worse, you can get excluded from the university.
