What would be the safest way to do it? I have run a 16:50 5k off 50 mpw and feel ready to increase the mileage for big improvements. I will be focusing on the 10k in the spring and my goal is sub 30.
The safest way to go from 50 to 100? That jump in mileage is no joke so do everything you can to soften the blow, while getting the volume. For example, don't stop with doubles, add in some triples. For example, a day with an easy 6 early in the morning, an easy 6 at lunch, easy 6 in the evening = 18 by my math and it might be easier to digest than say a 10 and an 8, *if* you run these sixes nice, easy and keep them spaced out by a few hours. Is that silly triple a better day than a double? That wasn't the question here. Also, slow down as much as you can, wherever you can, until you adjust to the new mileage. Consider moving some runs onto a cushioned treadmill. It's awful but will it can be easier on you than doing it all on the roads. Eat well, get plenty of sleep, good luck.
