This is literally it. Been dealing with chronic injury and related fallout for 15 years straight. Would give anything to be able to feel what it's like to train hard, race hard, experience the nirvana of a long-run, completely lost in thought and nature, feeling strong....
Id wish that for every mile I run, my wiener would grow by one inch.

This is completely impractical.
For your first wish, you're going to get a 26+ inch wiener after you run a marathon. That brings way more disadvantages than advantages. It's like being 10 feet tall. And what happens if you do an ultra? BTW, if your wiener doesn't reset each week or so, it would be longer than a blue whale in a few months. This would be downright lethal due to the strain it would put on your circulatory system.
For your second wish, running 40+ mph would almost certainly get you hauled off to some secret military site where they'll experiment on you. I suppose you can outrun them if they don't catch you by surprise, but what happens when you break the sound barrier? Would you even survive that?
As for your third wish, you might need it to take back the effects of your other two wishes. Don't make any new wishes, because, odds are, they'll be just as bad as the first two.
Interesting question. I don't think I'd go with something obvious, like "WR times at various distances," etc...
How about:
- No injuries ever - The ability to run well (and do other athletic sports/events) into old age - Every single run and workout contributes to my overall fitness in a tangible way.
That way, you still "get out what you put in," and can feel good about your accomplishments, even if you have a bit of a leg up by never being injured and getting +fitness from each run.

You discovered the hidden secret of my third wish. Unlimited wishes means unlimited potential. I would be able to reset my wiener size after every run (if I so desire).

You don't need a wish to know your potential. Run for a few years and you'll have enough data points. Lower your times by some factors (conditions, whatever, be realistic), and you'll easily have an accurate Virtual PR to add to your Real PR.
