Fully understanding this takes graduate level coursework in Special Relativity but I will summarize:
Due to time dilation and length contraction the process of "flying off" is happening but is happening very very slowly, so slowly that your body can compensate for it. If you were paying attention you would notice that a step at the equator feels slightly less stable than a step at the north pole, this is because your body and its millions years old brain have evolved complex compensatory mechanisms to prevent this "flying off" from happening, even if its happening very slowly (thanks special relativity). This is one of the main reasons by bipedal robots are so hard to make.

I actually wish I could study physics more - there is so much to learn that it is overwhelming.

In this context, linear velocity is another name for speed. At the equator, your linear velocity is about 1000 mph. If gravity were turned off and you were on the equator, you would fly, tangentially, into outer space and travel in a straight line at a rate of 1000 mph. If you were at the north pole, then you are merely spinning, and have 0 mph linear velocity. In between the equator and the poles, your speed would be proportionately between 1000 mph and 0 mph.
The term VELOCITY in physics means speed and direction. Bob can be headed east at 55 mph, while Ed is headed west at 55 mph, and they have the same speed, but different velocities because they are headed in different directions. Now, if you are on the equator, your velocity is constantly changing, even though your speed will remain a constant 1000 mph. If you are far away from the earth, then at one point the person on the equator will appear to be moving toward you, while later he will be moving away - thus, the changing direction, and thus the changing velocity (but constant speed).

How would flat-earthers explain high tides versus low tides then? It takes a lot of energy to lift so much water. Could you lift a bathtub or a children's pool full of water?

The article is wrong to express "spin" in km/h. Spin or rotation uses units like "rpm". In the case of the earth it is 1 rpd or 0.0006944 rpm. With a radius, and a measure of spin, you can calculate instant speed at the end of the radius, but that speed is not the measure of spin.
Some cars have a tachometer, and a speedometer. They are related but they do not measure the same thing in the same units. It is your transmission that converts rpms to mph, by effectively changing the size of the "radius".

I wrote a reply to you but it mustn't have posted. Basically that yes, the movement of those robots is fascinating and I bet there are robots that are not publicly available for viewing that are significantly better.

Get the front passenger in your car to throw a ball up as you drive along in your car. Does it go straight up and down or shoot to the back at 50 mph?
This is a good analogy. I typically explain this, to kids, by asking them what would happen if they jumped straight up while flying in a passenger airplane. Would they land in virtually the same place or would they end up at the back of the plane?!

How can the earth be a globe if the universe is flat? How does NASA explain that?
The firmament was detected in 1965 by Penzias and Wilson with a radio telescope. Who can penetrate that? It's physically impossible in three dimensions.
