Cases are going up but everywhere is open and very few people are panicking. The public opinion seems to be that Omicron is a milder form and the government are panicking unnecessarily (I obviously hope they're right). I think your risks are:
1. US/Ireland/UK travel rules change with little notice and you're delayed returning home (maybe having to pay for 10 days in a quarantine hotel out your own pocket). If that would be a major issue for your school or finances, I'd think twice about going right now.
2. You catch Covid and can't leave your accommodation for days. It's really hard to assess that risk, but it would be a pretty miserable holiday.

I think you should have a great time if you do come. I would only worry about testing positive on your return home and that affecting your travel for the return to school. If you are double jabbed then you have little to worry about.
My son is stuck in Portugal after a positive test and will be later home now as a result. Difference is, he has nothing much to do and it's just an inconvenience!
