Not that her story really holds up to scrutiny but La Morenita Ricos does serve pig organs in their buche, which is pig stomach.

Ive seen people saying that it turned out she had beef. Where is this info coming from?
ordered beef, was served pork by mistake (so her story goes)
Whatever it was, she was not served 300g of it in a burrito unless it was the size of your arm.

It was renamed the Jerrito with extra "special Jerry sauce".

That's what happens when you drink too many Dos Equis. 🍺🍺
Do you actually believe someone who keeps a food log and keeps food receipts for future testing defense is stupid enough to eat a burrito from a Mexican food truck?
Do you believe someone training at the worlds most funded and scientifically advanced running training center in the world would eat from a Mexican food truck.
After seeing what happened to Ajee Wilson, one of your competitors, do you believe someone would eat from a Mexican food truck.
If she’s a cheat or too stupid to keep her body free of potential contamination, she gets the same result. Banned
Yep:
Lengua / Beef Tongue
Tripa / Tripe
Cabeza / Beef Head
... and
Pastor (Marinated Pork)

Except that Tripa (tripe / offal) is usually beef intestine, not pork intestine.
El Menu
Rocky montain oysters a la Mexicana
Albondigas de pig balls
Coctail de Higado crudo en sangre de cochino super macho.
Burrtio Gigante de Combo De Todo lo Sucio de Puerco.

It's not stupid to eat from a Mexican food truck in America. It's from the same food supply as other stores and restaurants in America. It's also held to the same health standards. If its good tasting food/gets good ratings, go for it. If you've watched food shows on TV like Masterchef, a lot of the contestants have a goal to have a food truck serving awesome food.
She probably tested positive because she doped, not because she ate from a Mexican food truck.

Heh, it's the first thing on the menu.
I read it as being a taco option but not a burrito option.
Personally I don't think the food truck exists, at least not one selling a product in the quantity needed for this failed test. It is as likely find a picture of Big Foot as it is a menu from a non-existent truck.
They have buche on the menu, which is pork stomach and could have conceivably been served to her on accident. It's technically offal. Now who knows if it was uncastrated though?

Tripa is typically beef small intestines. To get a boost of nandrolone, you have to eat pig kidney, heart or liver. There are traditional recipes for hígado (liver), riñón (kidney), and corazón (heart) tacos. But I have never seen those offered at any taco stand. That kind of offal is not popular and you would probably only find it in Mexico where people are careful not to throw away any part of an animal they slaughter.
There was a fancy restaurant in my town that specialized in offal. I had kidney and liver there on different occasions. European cooking, not Mexican. But I can safely say that if you were expecting beef and got kidney or liver instead (especially pork), you would immediately know that you got the wrong order and would stop eating.
You're talking about Tripe. Mexican tripas can come from cows, pigs, or even goats.
Traditional Mexican cuisine uses every edible part of the animal from hoof to snout to tail. Tripas can come from pigs and goats, but what you will get at a taco stand in the US will almost always be beef tripe. It is more widely available commercially in the US than pig tripe. It is also used in Menudo, which is a popular weekend staple at most traditional Mexican restaurants.

If her story was indeed true you wouldn't have to ask this.
Instead of actual details she's cried a bunch on camera while speaking in vague generalities.
if she's telling the truth, theres a clear path to vindication:
1) I went to food truck X at this specific time on this date
2) I ordered this specific item
3) after testing positive, I contacted the food truck about how they source their meat
4) I obtained meat either from the truck or from their supplier, and had it tested to confirm that it contains enough nandrolone to have triggered the positive
She did #1, the story starts falling apart at #2, and I have heard nothing to indicate that she pursued #3, 4
Great post. Her professional career is over unless she can provide some counter evidence that might contradict the charges against her. She had months to seek out this food truck and learn more about their operations but she never felt compelled to do so. She is not just a drug cheat but a chronic liar. What a terrible way to go through life. A sad woman.

I doubt she was ever even graduated from ASU. She probably cheated there as well.
I heard that at least one food concession that will be on Agate Street behind the east side of Hayward will be selling burritos made of hog awful. Another place is offering pangolin & noodles.

Her major was listed as computer science, and I think it's probable that she graduated.
