I only skimmed through this thread, apparently you got a number which is a good sign. This thread is funny. I am married now, but did well when I was single (I strung my wife along for over 4 years before biting the bullet :-).
Anyway, you said something interesting before; yes, always be confident, even if you're wrong. You have a better chance of changing someone's mind to your favor that way; the other way, you may change their mind in the way you don't want.
I was in a similar situation to you many years ago. The girl was actual a hostess at a very upscale restaurant in my neighborhood. She was SMOKIN' hot! Exotic model hot! Anyway, I would grab a drink at the bar, talk, etc. This went on for a little while, essentially letting her get to know me that I was a good-guy, etc. She initially thought I was an okay guy and all, but wanted nothing to do with me as I was a customer; perhaps I wasn't even her type, who remembers. Subtly, and with confidence I eventually gave her my number, twice, actually; she never called. I still went back to the place and made no big deal about it, may be we spoke about it, may be we didn't, I don't remember. The third time as the charm. She actually whispered in my ear, "I put my phone number in your jacket pocket, call me later". And that was that. Unfortunately, for the worse, she became my girlfriend at that time in my life.
Be confident, yourself, not creepy nor desperate and you'll be fine. Contrary to what many may say, women do like the chase, just don't be a weirdo about it. If she really wants nothing to do with you at all, you'll know, you will know.
