I do not believe that grant funded GOF and obviously neither did Fauci, so it is hard for me to see how he would be guilty of perjury for stating as much.

Evidence only has to show "probable cause." Probable cause is not remotely close to "beyond a reasonable doubt." Probable cause is broadly defined as a reasonable person might think that a crime might have been committed.
I suspect the approach will be to subpeona all the key players for Congressional hearings and their underlings. Catch an underling committing perjury and flip him/her to be a state's witness in return for immunity. Or, convince an underling to be a whistleblower. (They could write a tell all book and make millions!) Then, indict Fauci, Collins, and Daszak.
