Tumblr, and then twitter after tumblr decided it didn't want to host child pornography anymore. Weird young outcasts, people with autism spectrum disorders, and just plain psychopaths on tumblr and similar sites all found each other and had to outweird one another to gain attention, which gets harder and harder the weirder the "average" user becomes. It isn't enough to have an androgynous look anymore -- that was popular in the Eighties, for gods sake -- but they decided that actually, you can really BE androgynous, literally, according to some Wikipedia-level understanding of activist academic theories or whatever. And then the progressive activist movement picked up non-binaries as an "oppressed" group to defend, and a lot of white people (especially women) -- who without additional identifiers are considered "privileged" in progressive dialectics -- are able to switch to "oppressed," with all the benefits that spring from that, just by cutting their hair and occasionally "correcting" people's use of pronouns. Benefits include: ability to be absolutely as sexist or racist as you want to progressive-approved targets, never ever being seriously questioned about anything you say within progressive circles, getting your own team flag to wave, and so on.

Don't forget the endless amounts of attention for being part of a marginalized victim group.

I honestly wouldn't be surprised if that's the main motivator for it now. Not necessarily always in the sense that every non-binary claimer is cynically deciding to take a relatively easy path to oppressed status (though I'm sure some are), but more in the subconscious sense: kids drowning in progressive rhetoric see the special treatment the "oppressed" team gets, and some of them are going to "discover" they are really on Team Oppressed after all. This isn't even new, in the 50s Jack Kerouac wrote how he felt black people were more free to be themselves than his white guilty-Catholic self was, and he wished he could be a black guy even considering the trade-off of racism.

Well not really. As far as I can tell Nicki can recognise that she was born a biological female, currently she sometimes feels male, sometimes feels female but because of the first factor enters the women's races.

As far as attention etc these people are treated like shiit in their day-to-day lives in a lot of cases. I doubt anyone would want to choose that.

If it’s your strong held conviction that you are not a woman or a man but yet you allow yourself to be in a binary race, doesn’t that just prove that you really don’t care being labeled as one?

if Nicki really wasn’t a woman she would refuse to be in a women’s race where she is labeled as a woman racing against other women.
