The victims would already be separated by a couple of meters at least, and then the one in back would stop completely when the attacker struck, giving the one in front at least another meter or two of separation and chance to react. That may be why one of them escaped in this situation.

A couple of years ago, my husband and I went for a hike near Estacada, Oregon. When we got back to the car, it was surrounded by three guys wielding machetes in one hand and Big Gulps in the other. They said they were scouting the area for deer. We exchanged a few words, not particularly worried about the machetes, my husband has a concealed carry permit and was carrying, and left as soon as possible. So yeah, there are machete wielding Freddies in the woods, drinking Big Gulps.

It is extremely easy to hide a large knife against your forearm while walking past someone. Hence, your "solution" is a total failure.

I don't think so. It'd be easy to pull one out of a backpack after people walked past. Also there is a ton of stuff an attacker could hide behind out on the trail. This is really a doomsday scenario for a hiker. You see some guy on the side of the trail, seemingly going into his pack.. Seconds later, there is a blade cutting your throat.
The disturbing details that make this story so horrific are that allegedly it happened in the middle of the night after 4 camper/hikers broke camp and tried to escape the situation. The attacker was infamous on trail already and they probably tried to escape in the night after they realized who they were sharing camp with. One couple went Northbound in the night, the other couple went southbound, the alleged opposite direction the attacker was hiking. Allegedly the female victim plaid dead after the attack and was able to run the six miles out of the woods after the attacker left the scene.
So the couple knew they were in danger and tried to outrun it, or out hike it.
My brother who is through hiking met this guy a few weeks ago and said there was definitely something off about him.

I live in a rural part of Mexico. There are men wielding machetes everywhere.
Another article has an interview with a hiker who interacted with Jordan on May 3rd. It was apparent to the hiker that Jordan was schizo and the dog he was hiking with was actually a service dog. That dog may have known something was up in the end and that's why it went to the campsite where police were interviewing nearby hikers, then ultimately lead them to Jordan hiding in the woods. The dog running off during the attack also was the reason Jordan left the female victim when she was able to run off. That dog is amazing.
I’ve been planning a SOBO thru hike attempt in July. I guess I’ll add pepper spray to the list just in case.

Prayers go out to the others hikers involved in the assault as well. May they find peace in the rest of their hike.
If you drew a 2,000 mile long line across America there would certainly be heinous events. Unfortunate that it came upon people trying to be find tranquility. You can tell in their demeanor that they haven't even begun grieving.
The world clearly needs more good guys wielding machetes.
