The first race in Mushroom Cup was the best TT race. I played for a couple week trying to get under 1:00.00. I think my best was a half second slow.

I completely agree. I think Double Dash was my favorite. I rarely played 64 and when i did i just didn't enjoy as much as super.
Few things about Double Dash that i like so much:
-The ability to switch back and forth between drivers to maximize your weapons.
-The ability to dodge a blue turtle shell.
Although, I don't think anything feels as good is kicking your buddies ass one-on-one, making him/her so angry they can't look at your for days.

I think I got down to right below 1 minute a few times. World record is 58.34:
