Could be the personality of your parents. If you are 21, you are also likely still in college and not financially independent. That is a biggie. Being out of school with a job and living in your own place will change the dynamic (somewhat).
The R-rated movies bit seems a bit ridiculous. Part of it could be that your parents are just trying to hold on to their "baby" as it is coming to the stage where it will be just them again.

Just be as responsible as possible and try to placate their worries. I'd ask why they don't want you to watch R movies at 21.
