I started watching the old sitcom "Seinfeld" recently. Good show and a lot of the comedy holds up even for my generation. But I can't help but notice that everyone on the show looks 10 years older than the age they're supposed to be and absolutely no one is attractive. Even when a girl Jerry or George is dating is supposed to be hot, they're really just mid.
Were people in the 90s just not very attractive, or is this just a function of older film production technology?
Jerry dates so many very attractive women over the course of the show. Either you’ve only seen a couple episodes, or you’re a 15 year old with a very narrow/muddled idea of what’s good looking.

I searched for Seinfeld plus 3-4 of these actresses' names and found clips of their Seinfeld appearances. The clothes, camera angles, lighting, and makeup definitely detracted from the actresses' looks. Teri Hatcher was an exception because she was dressed to accent her quote from the show, "They're real. And they're spectacular!" In the clip from Debra Messing's appearance, for example, everything I mentioned above was wrong.
For a different perspective, look at a few episodes of Buffy the Vampire Slayer, filmed in the 90s. Most of the female characters were cute or beautiful and their clothing and lighting showed it, with the exception of Tara. Same with Xena, also filmed in the 90s. Gabbie was merely cute, but Xena's female protagonists were mostly beautiful.

Same exact thing. I would undoubtedly find both women to be incredibly attractive if they walked by me on the street wearing normal clothes without stage makeup. But the aesthetic decisions of the show don’t do them justice.

I thought needing revealing clothing and flattering lighting to recognize female attractiveness was a teenage/OP thing, but pretty sure you’re like 70.
It’s true that making the female characters as sexy as possible was generally not a priority on Seinfeld. If you’d like, I have some websites I could refer you to.

And when I say "attractive," I'm not just limiting this to sexual attractiveness of women on the show. Everyone looks older and frumpier than they would if they were shot using today's technology.

For context, HD TVs didn't exist in the early 90s and the average living room TV was 24-27 inches. There would have no reason to shoot Seinfeld using movie level production quality because it wouldn't have translated to the viewer anyway.

If she were around in the late 80s and early 90s, Sydney Sweeney would not get roles in Hollywood productions. She would be doing, shall we say, low budget film work in the San Fernando Valley or be back home working as a receptionist for Spokane's top-rated orthodontist.

Eliza Dushku might be the most beautiful woman ever born and she's a darn good actress too. I don't know if anyone else could have sold the Faith character like she did.
