I would refer you to NCAA Bylaw 12.1.2(b)) regarding professional obligations. Although I do think these NIL deals will parlay into ongoing relationships beyond NCAA, however since it can’t be contractually obligated there are no guarantees. Case in point: Touhy x Adidas

would seem a company could just sign an athlete to a multi-year NIL deal... And that would basically lock them up after they graduated...

You answered your own question.
An NIL deal by definition only occurs during NCAA eligibility, so a 5 year deal would put her beyond that point and therefore not be allowed. Clauses B and C are part that would prohibit a shoe company from contractually obligating an athlete beyond their NCAA career, since it would include promise of pay as a professional.
It doesn't have to be or have any relation to professional pay and obviously it can't for NCAA athletes
Unless you can point to something specific I think you're just making stuff up based on your own hunches

Having such a long-term deal would obviously affect the athlete's ability to sign other deals...
But I don't see anything in the NCAA rules that puts a time limit on it.
There's obviously a lot of possibilities you can do with contracts but I don't see anything in the rules that specifies you can only sign an NIL for as many years as you has eligibility
The world of contracts is really complex but as far as I could tell it would be possible for Adidas to lock someone up if they wanted

You really think Adidas who sponsors some of the top athletes in the world, who has contract lawyers at the ready, is somehow too stupid to put a clause in a contact if they could?
Again, NCAA athletes are ONLY allowed to enter NIL contracts that span their NCAA eligibility, anything beyond that VOIDS their eligibility to compete. It says that in the clause you quoted yourself. That’s why some athletes are quitting college early to go pro if their sport draft process allows.
If that is true, then the biggest loser is addidas.
How did they lose? If they wanted to match the offer they would have. Most likely they saw the results last year and got out at the peak. If she continues improving great, so what, they still save their money. If she doesn't, they can say look, she got all the records with Adidas and she went downhill after signing with Nike. It's a win win.

What makes you think Adidas would be her top choice as a pro? They don't have a great team for her. She has Adidas Nil because she runs for an Adidas school.

Eventually some brand will get NIL right for a college athlete, the set schedule of championships and usatf summer, matches up naturally to a marketing calendar. So far though no brand has taken a serious shot at it. Even football and basketball is under utilized with deals mostly just about funneling cash to recruits, or selling jerseys.

Nike has sucked with women and lots of Bowerman women always injured not to mention Nike terrible history with Mary Cain. She should go with OAC for sure!

Plenty of other great clubs she will fit into that aren't marred with all kinds of controversy like OAC or at this point still BTC. Hope she thinks hard before signing.
One thing is for certain. IF she is going to sign with Nike, it will be announced within the next couple days. There is no way that Nike would let her run in her only televised race this summer while wearing an NC State singlet with an Adidas logo on it. I would think if she runs USATF in her college singlet then she is not going to BTC. At least not this summer.

Any rumor would take off in her case: Adidas - where she already is, follow E Henes. Nike - deep ties to Nike w/ the 5 trips to nxn. OAC - probably best personality fit w/ Monson and ties to Hurta. Stay at NC State - last dance w/ Chmiel, Bush and she could easily race only 2-3 meets with a giant base build for '24. All good options.
