Sounds like a wonderful plan. No wonder we’re all doomed. I have co-workers who haven’t run a day in their lives that would give better advice.

Except this is entirely dependent on the data you train it on. For image recognition, if you give it pictures of dogs and cats, but you tell it the cats are dogs and the dogs are cats, then it will identify dogs as cats and cats as dogs, and be wrong 100% of the time. Therefore, you have to be careful to train it on accurate information. Even with a simple binary model, it's real-world accuracy is entirely dependent on the knowledge and accuracy of the human coding it.
For a language model, it's even worse, because you don't define error only on the veracity of the output (or even primarily), but by how much it sounds like a human. It trains on human-written inputs, and its goal is to create language that sounds as similar as possible to the aggregate human language. It has to learn definitions for that yes, but also grammar, sentence structure, paragraph structure, argumentative reasoning, etc. Nuanced context is one of the hardest things for it to understand, because it's so dependent on a single specific instance, making it hard to train for veracity (so it simply doesn't). This is compounded by the above: that human input is often flawed or outright incorrect, but it has no way of knowing that unless you tell it so.
All that to say: AI can be very useful, but we are very far away from a single-use AI program that can compete with the collective of human intelligence; instead, it's best used in very specific contexts to optimize or discover a solution in a situation where the primary constraint is time (like basically every piece of technology before it).
