I haven't read the whole thread but I'm going with William Shatner's cover of "Rocket Man."

I like Damone's cover of wasted years better than Maiden's original version.
Cowboy Junkies - Sweet Jane.
Teenage Dreams sung by Tiffany. Way better and sexier than what's her name.
The Chipmunks.
Red Hill Mining Town - U2
Apparently U2 never did it live until now because it wrecked his voice
Mike Masse
Respect. The version by Aretha Franklin. It is almost forgotten it's an Otis Redding song.
Didn't read the thread so I don't know if this has been mentioned, but helter skelter by motley crue is superior to the Beatles original version.
The Pixies cover version of "Head On" by Jesus and Mary Chain.

You've got to be kidding me.
Cash's version doesn't even come close to conveying the bleakness and desperation the lyrics suggest. It's just a sad and pretty "easy listen" song. NIN's original is the real suicidal self-loathing heroin addict story, and you can feel the authenticity.

The Beatles were prolific of performing popular covers and having their songs covered.
