Hemoglobin does not thicken your blood, but lots of bad things happen to the body.

You can look at the list of 8000m peaks (of which there are 14), and see number of ascents and %death.

Everest is about 5700 ascents with 3.9% death rate.

Annapurna I has 191 ascents with 31% death rate.

I would say that Annapurna I is way harder than Everest.

Interestingly, the first person to climb all 14 is also the first person to climb all 14 without supplementary Oxygen. (Reinhold Messner)
