That is how everyone seems to be interpreting this question. Van der Waals forces are a consequence of EM forces (plus quantum effects). If we assume that that as well as strong and weak nuclear forces remain intact as-is, then gravity is the only one of the four fundamental forces gone missing in OP’s premise.
If so, things won’t just burst into smithereens. The earth itself would elastically rebound from the extreme compressive tension of gravity and crack but probably not instantaneously and not into smithereens but more like large fractures into pieces loosely held together until they slowly separate away from each other in space.
Since people don’t actually understand quantum mechanics, beyond the math, and can’t mesh it with the laws of gravity in relativity, I think it is safe to say that no one knows.

We know humans can survive 0 gravity for a while, so that's a matter of keeping air, water and heat around as long as possible. But eventually all the air, the water, the whole Earth will disintegrate out into space in a million directions. How long could someone survive, and how would they do it?
Zero gravity is not. You clearly have no clue about physics 101. Zero gravity is just a friggin illusion. Both objects have the same acceleration relative to one another that’s why they feel like they are weightless.

Yes. Just no gravity.
Strong nuclear, weak nuclear, that all still works. Air molecules will still bounce off each other. Rocks will still bounce off other rocks. They will still be affected by solar wind, radiation, etc.
What some posters, particularly the nasty midnight crowd, don't realize is the Earth will start moving at a tangent relative to the sun. At first, it will be moving away from the sun at only a small fraction of its orbital speed of 3.14 AU per year. That might buy time for some clever people to do things like build a spaceship with a ton of supplies.
And with gravity eliminated, you can now build huge spaceships, because you don't have to launch them into orbit. They have to hold only 1 atm of air pressure inside, which some existing vehicles could be converted to do. And you could shield them with thick layers of lead to survive a long space voyage. Stock them up with as much food and oxygen as possible, and you now survive a few months, like a space station mission.
Most parts of Earth, including the atmosphere, will hang around where Earth was for a long time, as a kind of nebula and debris field. So your ship can sail around collecting supplies out of that for some time, while you figure out what to do next.

atmospheric pressure is due to the weight of the atmosphere, not its mass. without gravity the atmosphere has no weight (weight = mg). therefore we instantly go from 14.7psi to zero.
Air pressure is a feature of thermodynamics and not inherently caused by gravity.
The standard unit of 1 atmosphere is based on the thermodynamic conditions in the special case of the air at Earth's surface. That air is compressed, and higher pressure. In this case, due to the weight of the air above it, yes... but the pressure is directly caused by having more air molecules per unit volume, just like a bicycle tire.
Take away gravity and yes, the surface air will start to expand into greater volume. But initially, you've still got the same air in the same small volume, so there is still air pressure.
"Gravity" like "planets" "galaxies" "satellites" "outer space" does and do NOT exist. Atmosphere and sun would drift apart very quickly, so after a few minitues there would be no oxygen, and we would die. If you were somehow indoors, probably closer to an hour before the air drifts out of the building. The longest survivors would be in the ISS who could probably do 1 year plus.
