Most of the songs that came to mind have been posted but adding this one because it's so much more well known that Michael Nesmith's original and I love this version that harkens back to the bluegrass roots.

If anyone knew how to cover others tunes it was Elvis, here he pays the great Lonnie Johnson that honor, but......really not an improvement which tells you how talented Johnson was.

Okay, then. So I suppose Bowie's version is a cover of Mott the Hoople's....
There was something like that with Because the Night for Patti Smith, and Bruce S. started writing it, not finishing it, and giving it to her. She finishes it, and it becomes her first big hit. Bruce apparently later records it as well.

Sounds like a joke,but it’s real and actually really good.
Also, if you like Steely Dan, check out Fire in the Hole, an album of covers by two Swedish vocalists- it highlights how great the songs are.
