I'm a low mileage guy. I find that 40mi/wk suits my life and ambitions very well. I can do 50 over, say 10wks. more than that brings me over the top and I feel that the running becomes too much.
In order to be able to pull off a 2.55.52 a lot of the miles are workouts. Mostly MP last 12-15wks or so and 800 reps at 5-8k speed. Also a lot of long runs in there and a lot of those with 5-10k MP finishes to harden the legs and head. I don't mind doing big workouts and then rest a day between. It feels that my body can absorb that quite good as opposed to add too much E running in between. I changed to this approach a couple of years back and it made me get my motivation back. Basically, I had to accept that I'm older and find a recipe that worked for me instead of trying to keep a training regime that worked when I was younger.
I thought I would check my Strava to see what my 2019 was like. I'm fortunate to still be young and able to whip my body into shape quickly:

My goal this winter is to consistently run 35 MPW of easy running. I'm going to focus on non-running goals, namely improving my vertical jump. I've always wanted to be able to dunk a basketball well and improve my spiking ability in Volleyball (my wife and I have been playing in a rec league with some friends from work). I kind-of could dunk for a couple years in college, but never consistently. I know I can still pretty easily grab the rim, and I've always had pretty good natural jumping ability, but never focused on training it, so I hope I can get there in 2-3 months. I'm excited to take some pressure off myself to hit running workouts. I will do at least one half in the spring and then participate in corporate challenge - probably a 5k, half marathon, and Mile - sometime in May/June. I'm hoping to not run another marathon until boston 2021, but I'd like to get some speed back before then - get back under 4:55 for the mile, and hopefully knock out some prs in the 5k/10k and half. Tentatively targeting ~ 16:55, sub 35:00 and sub 1:20.
