the question should be: why does an athlete with a continuous (and recent) history of eating disorder(s), continue to put out content about/advising on/showing off her current diet
“There is only one thing in the world worse than being talked about, and that is not being talked about.”
Typical youtuber attitude:
1. Post content about food/diet
2. Wait for someone to criticise it
3. Take advantage of nowadays attitude, so any comment that’s not an appreciation one, it’s harassment, because my youtuber-ego cannot handle negative/contrary opinions
4. With a bit of luck and a very good lawyer, sue him/them and earn some millions in the process...

There are so many people on social media that want to show what their "healthy" diet consists of. I am not sure there is ONE person out there that cares about that. Being thin and in your 20s has very little to do with what you are eating if you are active.
Who ever said she was anorexic? She said she had an eating disorder, she never said which one. Anorexia is not typically the ED of "successful" elite runners because the under-fueling would massively inhibit performance, they usually suffer from some variations of Bulimia Nervosa where binging and/or excessive caloric intake is offset with strenuous, overexercise and training rather than purging. They often suffer injuries from this overtraining more so than from low bone density.
yep and she went into detail about RED-S and how it was massively inhibiting her performances, also about her restrictive eating.
You've just thrown an assumption out there based on what you think, instead of going back and looking at/listening to what she actually said.
Secondly, you're wrong - anorexia is incredibly common amongst athletes with eating disorders - the obsession with making a weight, the constant poor races and sessions, the under-nutrition which leads to the stress fractures
Another famous (anorexia) example - Jake Smith when he went to Uganda. Westerners go to East Africa, try and eat like the locals when their body isn't compatible with it, and it leads very quickly to big problems
