Do any of you all wear the Nee Balance LD5000? I’ve been looking at these because they seem like a good mix of lightweight, cushioning, and stiffness, compared to something like the Nike Matumbo, and it actually allows me to remove the spikes.

Absolutely, there are other options that are very good. However, if you want a really good spike that works for almost everyone that can be found for less than $100 and even sometimes less than $70 than the Victory 3 is a good choice. OP didn't give us much info about his speed, preferred price range, running style etc. so I tried to recommend a high quality, all-around great spike that would be a good recommendation for the majority and not minority.
Other brands make good spikes, but some are specific to the type of runner. With say, the Endorphins, OP won't like those if he feels like he needs a fair amount of cushioning, but if he likes being as light as possible and doesn't care much about cushioning then the Endorphin will be great.
Personally, materials matter a lot to me and the Victories are top of the line material-wise. They are also light and aggressive. That's why I like them and my teammates who wear them all like them too. I also have teammates that wear Avantis, NB's Vazee Pace and Hoka Evos and they rave about those too! The bottom line is that OP should try on different spikes if they can and get a feel of what will be best for them. The Victory just happens to often be a great choice for everyone, and that is why I think it is a good recommendation, especially if it's last minute and someone needs spikes.

Coming from a 15:12 3 mile, im trying to run a 4;19 1600 and 9;19 3200 (maybe a sub 2 800 if my speed is good) I would like to spend less than $100.
I dont need much cushion but I would prefer to have a hard spike plate than a soft one (that's why I didn't like the saucony endorphin XC flats, they felt too soft) I can answer any more questions if you have them.

Alrighty then, that helps a fair amount. I'd still stick to the Victory 3s if you can find them on eBay for a good price. Other than that, I've heard good things about certain Under Armour models, but I've also heard bad things so I'd recommend you try them on. Also, NB LD5000, as mentioned above, has received lots of praise, and a teammate of mine who's a 4:12 1600 guy wears them. This is far from a be-all-end-all list though, as I'm sure you know.
I like the Zoom Victory 3's, but why the hell did they decide to make so many NEON colored shoes? Like who honestly wants neon yellow and pink spikes?

Those are the Rio colorway... just wait until 2020 when the 4's come out...
Went to the store and tried on most of the spikes recommend, I choose the NB LD5K but the victory 3's were a close second.

What did it for you?
I liked the hard plastic bottom and grip. I thought the spike plate of the victory 3 went too far back to my midfoot and forced me into a more aggressive stance, which although I do run more on my forefoot, I don't like being forced into it by my shoes.
I've heard great things from collegiate runners about Mambas. They have non removeable spikes like Matumbos but I've heard the Mamba is best in 800-5000 and even 10000.

I have been oogling the the NB LD5000 and other similar spikes, but I used to hate the hard plastic bottom of track spikes and ran in XC spikes on the track for the 1600/3200. Maybe I’ve changed.
