The first one that comes to mind is "Ramble Tamble" by Creedence... the start's not that slow, but the long instrumental break in the middle starts very slowly and just keeps building and building and building.
I'd also mention 'I Am The Resurrection" by the Stone Roses.

I remember hearing it as a small kid. I was thinking of it yet couldn't come up with the name when I saw this thread. I was thinking "Nash Rambler". It is designed to get increasingly faster and by the last chorus they are moving so fast that they can barely get the words in audibly.
