Hey David, just some honest feedback, but at your standard I don't really think you should go on 'easy' runs. I mean, 11:00 pace isn't really running. I can walk that fast.
I have a brother who's been getting into running. He time trialled a mile with me as his pacer and managed 6:35 on a field. So what we do is he joins me on my PM run 4 or 5 days per week where we run anywhere from 7:40 to 8:30 pace for a 5 mile route. He's been improving VERY fast. In the first couple of weeks we were doing a 3.5 mile route and even then he would burn out by the end. Now he's getting to the stage where he can comfortably run 5 miles at sub-8 pace while holding a conversation, and it's only been around 3 months.
What I'm trying to say is, I think you should go faster on your runs. 11:00 pace isn't going to benefit you.
