When they are in the draft, they give up their college eligibility.
They can stay in school if they so choose. Many have continued in school to get their degrees.

The other side of things never mentioned is drugs. Drugs exaggerate the difference between the races in some sports. They have a heightened effect on blacks when it comes to speed, and on whites and Asians when it comes to strength. Hence there are few white sprinters of note and literally zero black strength athletes of note outside of "power lifting" which is known outside the US as cheat lifting. This is because you can have a guy with short legs or a guy with long arms beat guys stronger guys in the squat or the deadlift because of the way the events are set up. Heck, get some fat guys of any race out there to bench press and some of them are barely moving the bar and being credited with 800 pound lifts and more. It's ridiculous.

Yeah, everybody knows his grandfather was an Olympian and his father was an NFL star, they mention it every time he plays. But Sime was not ever a world record holder. WR ratification in his day was much different from the FAT era. So many would claim WR times, but they were not recognized.

What are you talking about? Danny Amendola has been a mainstay for the Patriots for a long time playing the position McCaffrey will. Not a lot of white guys as #1 running backs, but plenty have played blocking fullback. I doubt very much a player who intentionally hurt a teammate in practice would be on that team very long. Players are valuable property to a team and hurting that property will mean money down the drain. A player targeting another player particularly in practice where it's an obvious situation, would be gone instantly.
McCaffrey will be a good RB if he stays healthy. He'll be a 1,000 guy easily. He'll be taking hand offs from a black QB, so the racist stereotypes will be turned upside down.
Lots of white guys could be good running backs. I said for years that Tebow should have switched to RB, people kept suggesting more common white positions like safety and tight end, but he would have been well suited to be an Eddie George type power back.

Christian is probably not in the top 30 fastest players in the draft and scouts comment on his lack of lateral ability. He does however find the holes well and is considered a powerful runner with solid acceleration and importantly can catch out of the backfield.
On the right team he could be very good.
But, I wouldn't get excited about him relative to any number of other top backs over the years. His whiteness will light up this board though

Yeah, so McCaffrey is considered to be an outlier, a White guy with "foot speed" as LaVar Ball mentioned how slow White guys caused UCLA to miss out a chance at a NCAA title.
Pretty obvious genetics have a huge role to play in any kind of field/task that requires "natural" ability. Nature plus nuture. Still, the fastest non-Black sprinters right now are East Asians, from China and Japan, of course you got someone with clear mixed racial traits like Wayde Van Niekerk breaking a long time WR and also recently running a very fast 200 while slowing down early in the race.
In the end I think stereotypes do hold people back and overall play a role in a small number of White sprinters and runner backs. However in the end, if you don't have the genetics to grow to be a coordinated 6'7 guy who can vertical jump 36 inches, your chance of becoming a NBA player is pretty slim. Take it for what it is. The same goes for any individual in other fields, science, music, literature, art, etc, the people who have achieved tremendous accomplishments in those areas aren't born everyday.

To add to what Gainesville/Miami Guy said, David Sime, went to Duke to play baseball. The track coach spotted him and recruited him over. Pretty damn soon he was a world record holder, and subsequently got injured. Later he said this was the best thing that ever happened to him as it made him realize that he needed to pursue a career that didn't really on his tendons holding up... He went to Duke medical school and through ridiculous hours trained in his dorm room using the bed springs as resistance... He really was an all around badass, and left a major mark on those who knew him.

McCaffrey's greatest accomplishment was dating MaryBeth Sant in high school... Although no clue whatever happened to her, probably got fat and dating a negroid.
