Most people do breathe less when they're nervous...and that is why people yawn before races.
Ever wonder why yawning is contagious? You see somebody else yawn and you start to as well. Yawning brings more oxygen into the body. When a person is tired their entire body, including the diaphragm, gets a little lazy. When the diaphragm gets lazy, the volume of air coming in diminishes slightly and you operate at a slight oxygen deficit. Seeing another person yawn reminds the body of this deficit and it yawns to take in a bolus of oxygen.
When runners are nervous before a race their breathing becomes shallow, forcing them to operate at that same deficit. Yawning is simply the body trying to get back in line.

It would have been useful if the commentators called out split times instead of this nonsense
Why does a big league pitcher take a big breath prior to starting the windup? Why yawn at he start of a race? A simple reaction by the body to relieve stress. People don't know the levels that their body actually "tries to communicate" with them.
Simple experiment. Put on a heart rate monitor. Watch PR. Yawn. Notice HR go up for 2-3 beats and then lower significantly below the norm.

Let me say it again! You're not yawning. You are imitating an actual yawn. There is a physical occurance that happens and causes you to actually yawn. These yawns that you are talking about do not have that because they are not yawns. It is like you are impersonating someone yawning.
While doing strides before a workout I almost always yawn, a lot. It's weird, cuz I'm certainly not sleepy. I've already run about two miles by then, and I yawn over the first two or three strides.
When I was 15-16 years old, right before races I would yawn so wide that my jaw would hurt.
I always yawn on the starting line. I can't control it. I don't feel tired. I just yawn. My high school coach would accuse me of staying up too late the night before. My college coach told me it is natural. Your body knows that it is about to go into oxygen debt so it is trying to get as much oxygen into its system as possible. "Fight or flight" response would be my guess.
I started reading from OP on and two posts before yours I yawned. So count me in the 80%.

I'm sorry I can't add anything here. I usually release anxiety with a fart or two. Although, it hasn't worked well so I might try the yawn.
