Some days you just have to go by feel. You might be out on an easy day and feel real good going from 7min pace to 5:30 pace for the last 4-5 miles. Some days you might just want to recover and run 7:30 pace. On specific uptempo/tempo run days you probably would be around 5:30 pace for a 7-8 mile run....something you could probably easily squeeze down to sub 5 if you wanted to for the last mile.
Based on your 1:52, and 8:11 I'd say you're right...you're not a total speed guy and you have nice range. I'd call you a "high V02max runner with a decent amount of basic sprinting speed." Given the right training and endurance you could very well possibly run 4 flat, AND sub 14.
