THIS. Subarus are known for the head gasket issue, and none of the new model Outbacks are recommended buys. I live in Oregon where Subarus are everywhere - the older ones have the head gasket issue and newer Subarus are not reliable.
Go for a 2014 or 2015 Toyota Venza - basically a Toyota "Outback" that will run to 400K miles with only oil changes. But more comfortable, better power, and better cargo room than the Outback.
I am a Subaru wagon fan, but I like the old ones, so not what the OP is looking for. The quality dropped after 2005 (4th Gen Legacy/3rd Gen Outback platform). Head gaskets are a consideration in used old Subarus, but that could just mean you get a good deal on one. My '96 has the EJ22 engine which doesn't have head gasket issues, at least up to near 300K miles. My '03 had the head gaskets replaced before I bought the car, so at the rate that I drive, it's probably good for another 20 years.
I'm happier in my '03 that I got for $2,100 than I would be in just about any brand new $25-30K car. It's a fun, analog car with 5MT, and easy to work on. I'm not a fan of the design (thicker A- and C-pillars, shorter/smaller glass area that necessitate things like back up cameras), extra gadgets that cost more money, and cause annoyance with little gain (TPMS for example), "infotainment" systems, CVT transmissions, and other unnecessary complexity in new cars.
