I've been very pleased with a 2016 Nissan Altima SV, purchased about 4 months ago.
Just sporty enough, quick and great on gas.
I liked the SR models with the shift paddles but there seemed to be a design defect that gave every SR I drove defects in the seat fabrics. Not so in the other trims.
If you want something that's like a Toyota Camry but less boring, get a Mazda 3 or 6.
I've owned both a Mazda 3 and a Mazda 6, and I've spent a lot of time driving many different intermediate-sized sedan rental cars for work (including Toyota Camrys and Corollas and Nissan Altimas etc.). Every time I would get back from a business trip and get in my Mazda 3 to drive home from the airport, the contrast between my Mazda and whatever rental car I had been driving was very striking. The Mazda felt a million times better and always put a smile on my face.
Currently I drive a German luxury sports sedan that costs twice as much as a Mazda and has 75% more HP, and it doesn't even quite give me the same feeling. I can put my foot down and it will accelerate for all eternity, but something about the responsiveness and feel of the Mazda is unmatched.
Get something with keypad entry. Lock your keys in the car while you run/race.
Subaru Crosstrek. Drives like a car. Space like a small SUV. Quite affordable. Good looks.
What's your price range?
Stick with the Camry, it's changed a lot since 2005. Try the new TRD!
If you are comfortable with spending a little more, go for a Model 3.

I drive a Lexus and have also driven a Bentley...but when traveling and renting a car I have been thoroughly pleased with Kia Optima. I would at least consider that and test drive it. A buddy just last week got a Subaru Crosstrek-as the other responder mentioned, consider this also.

As someone who can’t imagine buying a regular gas car in the year 2020, may I suggest....
-A lightly used 2017+ Chevy Volt. Offering Camry-like quality and size, with something like triple the MPG. They are nice, normal looking cars that get to 50 miles pure electric then 45mpg after that. Around $17k for one with 30k miles.
-A RAV4 plug-in hybrid, which comes out in a few months with metrics similar to the Volt, but a little more size, more $ and AWD. 300+hp, if that gets you excited. No compromises here.
There are options in pure battery vehicles now that are similarly priced to a Camry and offer 200+ miles of range. Chevy Bolt, Kia Niro, Tesla Model 3, and the newest version of the Leaf.

When you consider "old vs new" keep this in mind . Things always look appealing , until close up.

Why? If you can get 0% (or anything under 2% even) on a car you'd like, why not keep you money working and available in the event of emergency (or opportunity)?
Assumes you could pay for the car out of normal cash flow if necessary of course.

Because 30k is all I could come up with cleaning out my spare cash drawer and the 20s I found going through all the furniture in the house. Why would I want to waste my time filling out a bunch of loan papers and making payments every month for such a small amount of money?

Like you I buy & keep my cars for 15+ years. Our last cars were both Acura’s, one a sedan the other a SUV.
It was the end of the cycle and purchased in 2018 and just a week ago. Our new cars we have bought... Tesla 3 (33k after tax benefit) & a used 2015 Lexus RX f-sport (25k). Both do not disappoint.

Toyota Highlander or RAV4 if you want to go for an SUV?
I've got 281K on my Toyota Camry. Thinking of selling it although it isn't worth much now. It would be a great Park & Ride car for someone because no one would want to steal it.
If you don't get a Tesla, get another all electric vehicle.
