Well your situation sounds quite strange.
First, throw away all the crap from the people saying "you are what you are, just accept it". That's like 1990's self esteem faulty research bleeding through. If there is anything you can change, it is your muscle definition / fat percentage.
I would normally advise a slight caloric deficit most days for a few weeks and you will lose what you need to. However, what you are describing sounds way off. As someone who is 5'8 140 lbs, if I were to eat ~3000 calories a day while running 80-90 mpw, I would lose weight pretty quickly. You are running more miles than that, and eating significantly less (and the food you eat also sounds super boring, but thats beside the point). Why would you not be losing weight? Have you tried to fuel yourself closer to 3000 calories a day?
The way I would get to ideal weight would be as follows:
-Fast occasionally.
-Use the gym and lift more.
-Fuel yourself properly to the specific amount of calories you need each day and then create a deficit off that number
-Do some longer runs ~12 - 15 miles in the morning, fasted, after having taken caffeine, and then do not eat too much food that same day.
You could probably drop to 125-127 in a couple weeks if you really worked at it.
