What’s your current easy/long shoe(s)?
I mostly run in the Brooks Launch. I have a pair of Adidas Solar Glide but I don't like them nearly as much. Occasionally do easy runs in the NB RC1400 also.
Thinking of trying out the Brooks Ghost for a slightly softer shoe but I've run in the Launch for years and love them.
I used to love the Adidas Supernova Glide series but Adidas discontinued it. I like the Saucony Triumph and the Hoka Clifton. The Clifton is what I'm wearing on easy/recovery days

Reebok Floatride Forever Energy
I'm happy with them, but when the time comes to replace them I'm planning on trying on some Hoka Cliftons. If I don't end up switching to Hoka, then I'll probably get Mizuno Rider Waveknit 3 or Reebok Floatride Forever Energy 2. But I'll try on anything that my local running shoe store has in stock that looks interesting.

Reebok Floatride Forever Energy 2. Had 3 pairs of the first version and loved them so I'm on to version 2 with much less achilles rubbing and a better upper overall.
+1 for Reebok Floatride Forever Energy. My first pair is at 473 miles and still feeling fresh. Have 3 more stockpiled for around 50$ :)
Grabbed a pair of Saucony Freedom ISO2 at 50% sale - and they seem to be good for long runs as well as pretty much everything else.
Also, Nike Epic React 2, when it's not too cold.
Soft squishy shoes and me don’t mix at all. They destroy my feet and calves, like running on sand. The Adidas Boston and, increasingly the On Cloudflow, are my easy day shoes. I’m on my last pair of Boston’s, when those go I’m gonna use my Adios as my daily. Right now they’re my workout shoe but I find them comfortable at easy paces too.
Increasingly my easy days include time barefoot running.
I recently purchased the New Balance Propel and am finding that I like them for my easy days. I did 13 in them today split between two runs so they have a shot at being a decent long run shoe, too. They are not the replacement for the 890v6 I was hoping to find but I'm liking them nonetheless.
If anything, the Propels remind me of the Beacon but with more rubber on the outsole, which ought to fix one of my major gripes about the Beacon (quickly wore them out).
Most pros run their easy mileage in heavy shoes (~10-11 oz), especially if it's on asphalt. Then again, there is much more on stake for them, whereas for the recreational runner being injured isn't nearly as bad (they still get their paycheck).
Fast shoes should be used on fast days. Now if someone is doing like 50 mpw, it won't matter much but if doing 75+ mpw you really want to minimize the pressure on bones in the feet and lower leg.

New Balance 1400 V5 are the shoe I have been running in for easy runs, long runs, tempos, etc.
Many of the little issues I had with my hip and heel (not plantar, something else) disappeared when I switched to this shoe. Previously I had run in Asics Cumulus 18, Peg 33s and 34s.
I truly believe less is more when it comes to shoes now.
Reebok Harmony Road 3 - I love it more than I should BC I paid $37 at the outlet but it gets the job done
I bought the Brooks Ghost (whatever the latest version is) as an easy run shoe, I find it a real mess to run in. I usually wear either Boston or Hoka shoes but wanted something in the middle.
Altra Duo and Hoka Rincon.
The upper on the Duo is a bit sloppy but it's not something I really notice once I start running. The Rincon is a no muss, no fuss shoe that's light but still cushioned.

Did you find the Propel sizing runs large ?
I just returned a pair (11.5) which fit too loose. Cushioning was nice but felt I needed more arch support. May have been the loose fit.
I find the Rincon to not be quite enough shoe for me after 8 or so miles. Have to move up to the Clifton for longer distances.
New Balance 1080v10. After the break in period, these shoes are fantastic for easy/long runs.
