I have a pair of Ultra Boost 19's and they do not really remind me of the Escalante's much.
which is why looking for a shoe with the same type of foam is short-sighted
the escalante 1 and 1.5 used a TPU foam, like Boost or Everrun, but adidas doesn't make a shoe that FEELS like an escalante.
OP...firstly I'd like to know the exact reasons why you didn't like the Escalante. might not have been the zero drop that was the issue...or maybe you didn't give it enough time. the escalante is by no means a perfect shoe but for many people the drop wouldn't be the biggest issue.
the saucony freedom is a comparable shoe, though a bit less spongy and a bit more performance-oriented.
going up to the altra torin might be enough of a change that the zero drop becomes less of an issue as you get more heel cushioning.
you could also try a shoe like the reebok floatride run fast which is higher drop but soft like the escalantes.
there are many others but I wouldn't make too many recommendations until you give more info
