Normal amounts of jerky are fine but eating that much is probably not ideal. Depends what else he is eating but pretty high levels of saturated fat, protein and sodium with no exercise will increase risks of heart disease and cancer and might damage kidneys too along with poor bone health. If lots of refined sugar is also a part of his diet well he will have a very bad cv system going forward.
CV disease is more of a long term risk. This sort of skewed diet isn't that unusual in severely autistic kids. As a result, things like scurvy arent unheard of. Extreme salt intake can cause a host of different issues as well.
Its easy to blame the parents from the outside, but in a lot of cases, there really arent many options and the parents really aren't to blame. It can be very tough. Some of these kids will literally starve themselves to death if you dont let them eat what they want.
