This type of behavior / thinking (over-emotional) is seen in ~30% of the population but does, in fact, occur in both men and women. These folks are beyond help. There is no discussing anything with them as they are dominated by emotion (predominantly fear & hate) and unable to think logically. I'm kind of at a loss. My girlfriend and I have fairly frequent fights. She is ALWAYS the instigator. There have definitely been times that she did indeed have a point, but she tends to get very emotional over things that seem like no big deal to me. Sometimes it rubs me wrong though, and if I ever fire back with the same emotional intensity as her, she breaks down, starts crying, and then makes no sense at all the rest of the argument to the point there's no point in even trying to talk things out. We have to wait until the next day when she becomes sane again. It's become a pretty big problem in our relationship actually, and it's making me question if this is someone I can be with long term. I'm a pretty emotionless guy relative to the average person though, so it's hard for me to tell if I'm being insensitive.

Yeah... That's why I'm at a loss. I've had girlfriends before, and none of them acted this way. They could be emotional or irrational at times, but it was never close to being this bad. With my current girlfriend communication breaks down to the point I may as well be speaking Japanese. Words don't seem to make any sense to her when she gets into these states. It is frustrating for me because I am generally operating at a MUCH lower emotional level than her, like 0-2 out of ten, and if I ever get up to even a 5 or 6, she has a meltdown. I don't understand it and can't make sense of it, nor have I been able to come up with a solution. I try to stay absolutely calm, but many times she is both very emotional and way out of line (she even admits this the next day), so it's challenging for me.

Don't even need to read the rest of the v replies so I didn't. You have choices. Either get engaged and get carried, cause that's what she wants, or break up with her. Choose one.

Track the arguments on a calendar. In all likelihood, you'll notice a pattern after several months (like arguments always occur between the 7th and 10th days). Don't mention any of this to your girlfriend, but take pains to avoid conflict on those days. In some cases it may be necessary to plan work travel on those days, or to find other ways to avoid all contact.
If the relationship is otherwise great, it's worth the inconvenience.

This is useful information. The fact that you think this is a different level from previous girlfriends is telling. Your other girlfriends were probably normal and your current girlfriend has emotional issues of some sort.
It probably isnt going to work out.
Honestly, end it now. Your quality of life over the next 20-30 years is going to be largely determined by finding a spouse whom you both love and can inherently trust and work with to raise children, make financial decisions, commiserate with about work stress, and face other real life problems. I’ve seen dozens of cases like yours and they always end badly, with the guy either trapped in a horrible relationship situation or divorced with kids he pays for but that live 2,000 miles away. Move on and find someone you enjoy being with every day.

Show some empathy dude. Ignore all the idiot advice on this thread. If she's feeling very emotional and vulnerable it's a hormonal thing. The last thing you should do is make it worse. That's just bullying. Grow the fukc up!
She might always instigate but you might always be at fault.
Maybe be a grown up and try to understand what's at the root cause of the arguments. Might need empathy and listening skills you don't seem to have.
