I’m not training for anything in particular and just run for fun. I would like to go for about 2 hours at an easy pace each morning (with a day or two per week off).
Is there any benefits or downsides to doing this?
Do the long runs, but don't take days off. Just run 6-8 miles on those "off" days. You might need to step back the long runs a little bit while you incorporate those shorter runs until you can handle it with no days off. When I say no days off, I mean no planned days off. Once in a great while if you need a day off, take it, but don't plan any days off.
