It’s something you have to do sometimes. At least you can easily find somewhere to pee (unlike city running). It’s not glamorous, but it’s not a big deal either.
I always carry a baggie and wipes. If it’s somewhere that I can dig an appropriate hole well off-trail and bury it then I will.
Otherwise, there is the bag.
Never leave poop sitting out. That’s just not right.
I witnessed an ultra guy drop trou and unload in the middle of the trail. Once finished, he simply continued running like nbd. He left his giant logs in the middle of the trial.

I'm not even an ultrarunner, just someone who runs in the mornings, after breakfast and coffee. Pooping outside is a common thing for me. Just today I was doing an interval workout and barely got off the track to poop in the bushes. Carrying dog poop bags would be useless btw. If you positively can't hold it in until you finish your run, it's likely liquid.

No but that course is monitored. During an ultra race in middle of nowhere not sure they have the resources for a post race clean up ? ?

I've run ultras up to 50 miles (about 7 hours) and never had to poop during one. Maybe if you're running 100 miles and you're out there all day, but usually if you're actually running most of the race, you won't need to poop.
I have had to unexpectedly poop during long runs though. In those cases I just try to follow LNT principles as much as possible by digging a hole off trail and burying it. It's not a common thing for me so I don't carry TP, so in those instances I just use a small smooth rock, leaves, or some moss. However, as someone already said though, if you're squatting ATG there's usually nothing to wipe.

Honestly, deer/elk/moose/bear/mountain lions/all those big scary creatures most LR's fear typically out-number humans in those big scary wilderness-y backwoods type places, and I have yet to see any of them using doggie bags. What I DO see is plenty of their offspring (droppings), like all over the place - directly on the trails, just off to the side of them, here, there, and just about everywhere. So am I overly concerned if I need to use the bushes once in awhile? You be the judge...
