The recent change is that a lot of places have made tipping opt-out instead of opt-in. It used to be that coffee shops and pizza places had a tip jar on the counter and offered a line on your credit card slip to add a tip if desired. Now, you are presented with a screen with a 20% tip preselected, and you have to change your selection to "no tip" if you don't wish to tip.
It used to be the norm to not tip at these kinds of establishments, but the option existed if the service was especially good or if you asked for something burdensome and wanted to show some appreciation. They are trying to switch things so that it becomes the norm to tip, and the exception to opt out.
