The economics make it hard to pull off. It's not just one guy you have to pay to take a dive, but every single person fit enough to contend for the win. Probably your only chance would be to bribe judges to DQ a couple of major rivals in prelims off of questionable calls, but that's still hard to do with slow-motion video replays to deal with.
What would be the motive?
Rupp medaling in 2012 and Centro winning in 2016 smell dirty to me.
"Fix" does not have to be to fix the winner. It can also be to fix who does NOT win.
How about Usain Bolt false starting in the WC finals in 2011?
All the money was probably on him to win, when he loses, someone makes a ton of cash.

What the hell happened to Morceli in that race? 3 weeks later he runs 3:28, when nobody else that year broke 3:32. Wonder how much the Spanish paid him?
I would suggest Mexico and the 1500 final comes as close as possible to a fix in an Olympic final.
Kip Keino pretended to be seriously ill in hospital, even to the extent of only turning up at the very last minute for the final (hence the famous 'missed the bus, ran all the way to the stadium' fairy tale). Ryun was shocked enough to even see Keino in the final, and when Kenio started opening up a gap, he was genuinely afraid that he was going to collapse and die, so didn't go with him.
More gamesmanship than 'fixing', but it comes close in my opinion in that it led to a dishonest outcome.
2012 Berlin Marathon. Kimetto and Mutai broke away from the pack at 30k. They were shoulder to shoulder at the Brandenburg gate but just cruised in with Kimetto easing up to give Mutai the win. It was Kimetto's debut and Mutai was chasing World Marathon Majors $. Kimetto and Mutai were training partners and speculation was that there was an agreement that Mutai would take the tape to get the extra marathon majors $.

I think there are also some pretty obvious cases of a weak field setting one person up for a relatively easy win. As much as I love him, Haile had a few of these towards the end. Maybe it is just financial and a race puts all the appearance money into one guy.

A Runner's World writer actually called for the dissolution of the World Marathon Majors twice (the series, not the individual marathons), the second time after that Berlin Marathon in 2012, which pretty clearly was fixed for Mutai.

I don't think Haile's big wins were fixed, but Berlin in those years was clearly interested in world records and after paying Haile's advances, didn't have much money left for top challengers...nor did they want any.
I think that they fixed this one the same day but I could be mistaken on that.
Arguably, Kenya did not send its best three for the 2016 Olympic Marathon theoretically (and I stress theoretically) making it easier for Kipchoge to win.
