What percentage of married couples can pull off that feat? Obviously there's a few pro couples like the Halls and the Bruces, but if you had to put a number on the total, would it be more than 500 married couples?

According to the IAAF list 587 American woman ran sub 3 last year. So there are probably well less than 500 married couples that could do it in a given year.

True but that's only for one year. There might be 1500 individual women who have done it in the last 5 years and maybe 5000 women with a sub-3 PR depending on how you interpret the question.
I ran 2:09 at New York and my then wife ran 2:23.

My wife and I can sit in our recliners for three hours watching tv? What percentage can match us?

No, but at least one member of the duo must fall below pending testosterone level guidelines in order to be record eligible.
Please clarify:
You mean that actually, nowadays, recently, both you and your wife ran sub-3 hour marathons or
at one point in your life you did and at another point in her life she did? If so, how long before you fellas met?
Huge difference. In all honesty the first premise will be more impressive than the second one.

She broke 3:00 for the first time at Boston, I ran 2:33 in the fall
My wife hates running with a passion and goes to gym classes, I am still on the journey to go sub-3 with a PR of 3:09. I'm kind of glad my wife doesn't like running though so we can have our own interests.
